This morning is a bit overcast here in the Northwest, a welcome break from the crazy heat wave we’ve had over the last few days.
I think it might even be reasonable to do yoga on the deck this morning. I tried to practice out there yesterday but by 8am it was already SO HOT.
Yesterday was such a lovely day! I got visits in with some really great girl-friends, went berry picking, spent some QT with my lil’ sis, and, of course, ate really well.
Beautiful and bountiful BLUEBERRIES! My favorite.
The cabbages were doing well also, the fields went on forever. Turns out that hundreds of heads of cabbage smell a bit…well, strong.
My sis and I picked about 5 pounds of blueberries and 3 pints of raspberries.
Yesterday was not the most active day but none are recently. I walked a couple of miles at best and did 30 push-ups. I still get exhausted really quickly but I think it’s time to add in some longer walks.
After an afternoon of berry picking (and munching) lil sis and I were ready for some dinner. We made delicious thai-style “salad rolls”.
The Fixin’s
The Rollin’
The Rolls
Inside went
- chopped red cabbage
- strips of carrot
- cilantro
- basil
- lettuce
- strips of tofu marinated in Bragg’s Liquid Aminos
All wrapped up in rice paper wrappers.
We dipped the rolls into a sauce of coconut milk, peanut butter, and green curry paste.
So satisfying.
We also had some miso-sauteed eggplant that my sis whipped up, steamed kale, chard, and beet greens, and edamame.
Suns coming out, time to hit the deck!
Enjoy your Saturday!
