West Virginia was lovely but it’s really nice to be HOME! We’ve been in C’ville 5 weeks tomorrow and it definitely feels like home already.
We arrived at lunchtime to an empty fridge minus the lone bag of kale and a few other randoms.
I opted for kale pesto!
This was a new one for me but I will repeat it. Into the Cuisanart (the BEST appliance EVER) went
- lots of washed kale
- 1 Tbs salted and roasted sunflower seeds
- 7 halves of sun-dried tomatoes
- 1 Tbs olive oil
- 4 big sprigs fresh oregano
- 1 small can of water chestnuts
- a few roasted almonds
- salt and pepper to taste

I consider this “spaghetti” sort of a non-food, really just a vehicle for a sauce. For those of you not familiar with this item, it is a “pasta” made from soy, contains 40 calories per bag, and basically has no nutritional value. In general, I eat only food that is chockfull of nutrients but this was on sale the other day and this afternoon I was not in the mood for heavy carbs. It worked just fine.
A generous sprinkle of nutritional yeast and a side of sauerkraut and I called it lunch!
Yesterday was a lovely day for a country drive.
Tate’s mom and stepdad hosted the family for a luncheon at their house. They live in the gorgeous and very rural Pocahontas County, where the fall colors are in full glory.
My beautiful sister-in-law, niece, and bitty baby nephew were there too.
I left lunch just in time to see my little sister kick butt in her soccer game.
Watching her run hard in the game was just what I needed for inspiration to get out on my own run. I did 3.5 miles in 30 minutes. The first 10 minutes were an easy pace and the last 20 minutes were sprint intervals. It was totally one of those runs that I didn’t want to start but knew that I would be glad I did in the end. And I was!
that kale pesto looks awesome! i’m totally pining for a food processor. i bet it would taste great over spaghetti squash too!
I love spaghetti squash and I am sure this pesto would love spaghetti squash too! I think it would go best on toast though (I plan to find out with the leftovers!).
