I am actually quite passionate about soup.
Nothing says “comfort” to me like a tray of roasted root veggies.
Lasagna’s cozy.
Despite all that, summer makes my belly purr with content. I love the freshness and lightness of summer food. Salads and grilled fish, yogurt and berries, simple sandwiches.
And Summer Rolls.
I gathered all the veg from the fridge, grilled some tofu, wet the rice wrappers, whisked a few sauces and out came a fresh and flavorful meal.
In the roll
- thin stripes of cucumber and carrot
- alfalfa sprouts
- lots of mint
- butter-crunch lettuce
- grilled tofu marinated in sesame oil and soy sauce
- natural salted chunky peanut butter
- soy sauce
- rice vinegar
- honey
- chili flakes
- hot water
- 3 tablespoons miso
- 2 tablespoons hot pepper jelly
- rice vinegar
- hot water

mmm mmm! Changes in season and weather definitely changes my cravings for food.

I usually grow Thai basil every year, and love adding that to my summer rolls – but this just reminded me that I haven’t been able to find any yet. Must now go on a hunt for Thai basil to add to my herb collection. My summer rolls just aren’t the same without it! 🙂

these look so good! do you know much about the nutrition for rice paper? I saw some in the store the other day and they had more calories than a lot of tortillas!
Rice paper is pretty nutritionally void (sadly). They are really low in calories, around 40 each for the medium ones, 20 for the small ones. The reason the calories seemed so high is because the serving size on the packages is HUGE, like dozens of papers! I ate two the other night and that was plenty. One trick to making them more nutritious is eliminated the rice noodles that so often are stuffed in these wraps (more empty calories) and instead filling them with veggies, herbs, and protein (chicken, tofu, and shrimp all work well).
Also, commercial peanut sauce is usually loaded with sugar and preservatives. Making your own is easy and so much tastier!
