Last Day of The Year

I woke up first this morning and eagerly got to work on Tate and I’s favorite breakfast: scrambled eggs with lots of vegetables.  The veggies were picked, washed, and chopped before I realized that we only had one egg in the fridge. Bummer.  Our other options were oats with fruit or pancakes but my heart was set on veggies.  So I got creative.

Arrowhead Mills buckwheat pancake mix turned into savory crapes filled with sauteed veggies and topped with spicy yogurt!  I added fresh thyme, dill, parsley, feta cheese, and red pepper flakes to the batter and a little extra water to thin it out.  I loved this breakfast and will definitely repeat it!

Now it’s time to crack down on my “to do” list…

It’s a little late to plant bulbs but it’s gorgeous today and I read that it’s better to put them in the earth and hope for the best because they won’t last until next fall.

I am on the fence about resolutions for the coming year.  Reading over last years resolutions I am happy and proud to say that I have accomplished them!  They are all things that are a lifelong practice but I’ve improved on all of them over the last year.
